Speaking to a guy in the pub on Saturday night, who claims that Lindley's 10 year contract with Dens and Tannadice is up at the end of this season. (YES!)

My father in law thinks that it would be a great idea if a kiosk was maybe run by a successful bakery in Dundee (or maybe a different one for each kiosk). eg Clarkies or Roughies.

Keeps the business in Dundee and also gives the fans what we want : a decent bloody pie. I know that there have been times where I've nipped into Butties on my way up the road instead of paying through the nose for a tasteless pie.

What do you guys think? Would this be viable? And if it was, which food shops would you like to see represented?

Its mainly about the Health and Safety aspect of things. Lindley's have a massive, multi million pound public liability. Plus they have 100/200 staff on the books they can phone.

People under estimate the size of job running a stall.

So are there different laws between selling in a shop and catering? You learn something new every day. The guy was saying something a long the lines of if they get a new catering company the staff would have to go to them. Pity though, wish they'd put a bit of oxo in the pies. Maybe I'll just have to bring some with me!

PS. Surely it can't be any harder than selling to a bunch of drunk students at 2am on a Sunday morning!?

Very different laws, regulations etc. 

There is alot of regulations in regards to food, serving, cooking and that. 

Plus the logistics with food is worse. If I buy 1000 bottles and sell 500 they 500 dont go out of date. The same cant be said about Food.

If Lindleys buys 1,000 pies at 50p and sells 800 pies at £2.00 (or whatever cos I don't buy them) it makes profit and can afford to bin 200. If it does it regularly it's stupid so will adjust orders / staffing accordingly to minimise spend and maximise profit.

I know Dunfermline used to have Stephens doing theirs and I think they are similar to clarkies and have one or two main sites and distribute through smaller stores. They stopped because the club weren't making enough but I think I heard that that they resumed again.

It's definitely possible but like DerryDrummer says above, it's just a lot of work and Lindley's have an operation that is cost effective.

There was time (away possibly in the distant past) when wee, family, food shops and businesses (like a bakers) made a quality product on the premises, sold it to a satisfied customer.

The customer, enjoyed it and not only came back, but at the same time, told their friends and family of the quality and good value.

The end result was happy customers and a happy baker :)

Then came more and more regulations, under the guise of protecting the customer, but in my view, suited more the big, companies, who had the money, the space, and the technology, to mass produce "plastic pies" (and other bakers goods) which although tasteless, were within the onging food regulations.

No one wants to see questionable food practices that create health problems.

But at the same time, each new regulation, suits the bigger companies. And at the same time, puts another small, family, enterprise out of business. (imo)

A long story maybe about the humble pie. And I may be wrong in stating the following.......

But using that as an example, that (again in my opinion) is why, big companies, tun to only larger organisations ..... to protect themselves.

Any way whit aboot these Killie pehs.........they tell me, there are none better :)
